Easy Peanut Butter Cookies

Total Time: 25 min
Makes: 3 doz. cookies or 18 servings, 2 cookies each
1 egg
1 cup creamy peanut butter
1 cup sugar
1 tsp. vanilla
PREHEAT oven to 350°F. Beat egg in large bowl with electric mixer on medium speed until foamy. Add remaining ingredients; beat until well blended. Shape into 1-inch balls. Place, 2 inches apart, on ungreased baking sheets. Flatten each ball, in criss-cross pattern, with tines of fork.BAKE 10 min. or until lightly browned. Cool 1 min. Remove from baking sheets to wire racks; cool completely.
*these easy-to-make cookies don’t need any flour!
*note: I use a little less sugar than it calls for because it just seems like a LOT to me :)

This sounds delicious! I love the peanut butter to sugar ratio, nothing better than a good old fashioned 1:1 ratio of such yummy ingredients.

I tone down the sugar and put a little honey in :)

I raised 5 children and this recipe was a favorite. Of course, most any cookie was a “favorite” with the kiddie and I made a lot of them. But I always felt that using peanut butter in goodies inserted some protein that make the treat actually beneficial to them and not just a pleasant treat. It saddens me to know that peanut butter is removed from school menus because of allergies. The insertion of peanut butter years ago into the school lunch programs and into the pantries of the underprivileged did MUCH to bring protein into children’s lives and to promote nutritious eating.

I understand it though. Sadly, nut allergies are so dangerous! My aunt is highly allergic and being in any contact has nearly killed her so I understand the caution but honestly, if my child were SO allergic I don’t think I could personally send my child to a public school and take the risk!
